Potato Pancakes

Fried crispy edges - delicious alone or with a meal.

Ingredients

  • 4-5 lbs potatoes
  • 1 lg. onion
  • 2 eggs
  • 1 T salt
  • 2-3 T all-purpose flour
  • Crisco for frying

Preparation

Step 1

Peel potatoes & cut into chunks - Cuisinart all. Drani off extra liquid.
Cuisinart cut up onion.
In large bowl, mix 2 eggs,salt, onion and flour. Add potatoes & combine all ingredients.
Heat frying pan with Crisco. Fry lg. spoonsful of mixture, turning to get brown on both sides.
Drain on paper towels or brown paper.

Serve with sour cream or applesauce.
