Ingredients

  • Dressing:
  • 2 c. uncooked wheat berries
  • 1 c. pumkin seed kernels
  • 1 c. chopped apples
  • 1/2 chopped dried apricots
  • 1/2 c. dried cranberries
  • 1 c. finely chopped parsley
  • 1/2 c. ginger ale
  • 3 tblsp apple cider vinegar
  • 1/2 tsp salt & Pepper
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 2 tblsp olive oil
  • 2 tblsp lemon juice

Preparation

Step 1

Put wheat berries into a large bowl,
Cover with at least 2" of water - soak at least 1 hour
Drain well

Put 7 c. of water into a medium pot & bring to a boil
Add wheat berries, reduce heat & simmer uncovered
40 min.
Drain & cool

Transfer wheat berries to a large bowl
Add pumkin kernels, apples, apricots, cranberries & parsley

Combine dressing ingredients - whisk well
