Hummingbird Cake

Ingredients

  • Frosting:
  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 eggs, beaten
  • 1 1/2 cups oil
  • 1 1/2 teaspoons vanilla
  • 8 ounces crushed pineapple with juice
  • 2 cups chopped pecans
  • 2 cups chopped bananas
  • 2 - 8 ounce cream cheese
  • 1 cup butter
  • 2 - 16 ounce confectioners sugar
  • 2 teaspoons vanilla

Preparation

Step 1

Combine dry ingredients. Add eggs and oil. Stir until moistened, do not beat. Stir in vanilla, pineapple, 1 cup nuts and bananas. Grease and flour baking pans.

Bake 350 for 25 - 30 minutes.


Frosting:

Combine all ingredients, beat until smooth.
