Ingredients
- 3 medium eggs
- 1 cup buttermilk
- 1/3 cup oil
- 1/3 tsp vanilla
- 2 1/2 cups unbleached flour
- 3/4 cup brown sugar
- scant teaspoon salt
- scant teaspoon cinnamon
- 1 tablespoon baking powder
- 1 1/4 cups chopped fresh apples

- crumb topping
- 1/3 cup sugar
- 1/3 cup flour
- 2 tablespoons cold butter
- 1/4 cup chopped nuts
Preparation
Step 1
beat eggs. stir in buttermilk, oil and vanilla. mix flour, brown sugar, salt, cinnamon and baking powder, add gently to egg mixture-stirring only until all is moist. stir in chopped apples.

topping; cut butter into sugar and flour with pastry blender. add chopped nuts.
top muffins with crumbs and bake for approximately 20 minutes at 400
