cauliflower cheddar soup

Ingredients

  • 1 1/2 cups diced onion
  • 1 cup diced celery
  • 1 cup sliced mushrooms
  • 1/2 cup butter
  • 1/4 cup corn oil
  • 1 medium head cauliflower-chopped
  • 4 cups chicken broth
  • 3 cups milk
  • 1/2 cup flour
  • 4 cups cheddar cheese-shredded

Preparation

Step 1

saute onion, celery and mushrooms in butter and oil.

add chicken broth and cauliflower, cooking until tender

blend flour into milk, then stir into boiling soup, cooking until thickened

stir in cheddar cheese and stir

makes 10-12 cups
