Ingredients
- 1 large eggplant
- 1/2 cup milk, warmed
- 1 tablespoon butter
- seasonings, maybe some cinnamon
Preparation
Step 1
bake the eggplant in a 350 degree oven for 45 minutes. remove from oven, cool and peel, discarding the skin. chop in small pieces and whip in a blender until smooth, adding the milk, butter and seasonings. serve warm.
