Cauliflower and Leek Souffle

Ingredients

  • 3 large leeks(darker green part trimmed),sliced
  • 1 large onion,diced
  • 2 Tbs olive oil
  • 1 16 oz. bag frozen cauliflower,thawed
  • 3 eggs
  • 3 ts onion soup mix
  • 3 Tbs mayonnaise
  • 1 9" frozen pie shell or 16 frozen mini tart shells

Preparation

Step 1

Preheat oven to 350. In a large frying pan,saute onion and leek in olive oil for 10 min over medium-low heat. Add cauliflower and continue to saute an additional 10 min, stirring and separating pieces until cauliflower is soft. Remove from heat and stir in the eggs,onion soup mix and mayonnaise. mash togethr. Pour mix into frozen pie shell.(there will be enough extra filling to make an additional small tart or 6-8 min tarts.) Bake for 1 hr. Mini tarts will only need a half hour.
