Ingredients

  • 4-5 cups all-purpose flour
  • 1 1/2 cups quick cooking oats
  • 1 cup(4oz) shredded sharp cheddar cheese
  • 1/2 cup finely chopped red bell pepper
  • 2 tablespoons granulated sugar
  • 2 envelopes quick-rising active dry yeast
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1 can( 10 3/4 oz) condensed cream of broccoli soup
  • 1/2 cup milk
  • 1/2 cup butter or margarine
  • 2 large eggs, slightly beaten

Preparation

Step 1

put 3 cups flour, oats, cheese, bell pepper, sugar,, yeast, salt and onion powder into a large bowl. stir until blended

heat soup, milk and butter in a heavy medium-size saucepan over medium heat, stirring until very hot and butter has melted.

pour into flour mixture and beat with a wooden spoon until blended.

stir in eggs the additional flour as needed to form a stiff dough( dough will be sticky)

turn out onto floured work surface and knead about 8 minutes, adding more flour until dough is smooth and elastic. cover with a clean kitchen towel and let rest 10 minutes.

grease two 8-inch pie plates. divide dough in half and from each into a round loaf about 5 1/2 inches across. place in prepared pans. cover and let rise in a warm, draft-free place 30-40 minutes until doubled.

place oven rack in middle position. heat oven to 375.

cut a slash in top of each loaf. brush loaves lightly with water. bake on same rack, pie plates not touching, 25-30 minutes.
