Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 4 tablespoons sugar
- 4 tablespoons "light" margarine
- 1 cup mashed very ripe banana
- 1/2 tsp ground cinnamon
Preparation
Step 1
spray a 9 x 5 inch non-stick loaf pan with cooking spray. thoroughly combine flour, baking powder and baking soda, set aside. cream together sugar and margarine. add flour mixture and bananas alternately. beat smooth. dough will be very thick. spoon into prepared loaf pan. sprinkle with cinnamon, cut through batter with a knife.
bake 30-35 minutes in a preheated 350 degree oven.
