Ingredients
- 3/4 cup brown sugar
- 1/4 cup molasses
- 1/2 cup softened butter
- 1 egg, beaten
- 1 cup canned pumpkin
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/4 cup(or more) pecans
Preparation
Step 1
preheat oven to 375. cream the sugar, molasses, and butter; add the egg and pumpkin and blend well. In a separate bowl, mix the flour, soda and salt; beat this mixture into the pumpkin batter. fold in the pecans.
fill well-greased muffin pans about half-full with batter, bake regular-sized muffins in preheated oven for 20 minutes.
makes 15 regular-size muffins
