Donna's Blueberry Pound Cake

Ingredients

  • For Sauce:
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 1 t. vanilla
  • 3 cups all-purpose flour, divided
  • 1/2 t. salt
  • 1 t. baking powder
  • 2 c. fresh blueberries
  • 3 T. butter
  • 1-1/2 T. cornstarch
  • 2/3 cup sugar
  • 1/4 t. ground nutmeg
  • 1/8 t. salt
  • 1/2 cup water
  • 2 cups blueberries, rinsed and drained

Preparation

Step 1

Cream butter and sugar. Add eggs one at a time and beat until light and fluffy. Add vanilla. Sift 2 cups flour, salt and baking power together. Add dry ingredients to creamed mixture and beat. Dredge blueberries in remaining flour. Fold berry mixture gently into creamed mixture. Pour into a 10" tube pan which has been buttered and coated with sugar. Bake in a 325 degree oven for 1 hour and 15 minutes. Serve with ice cream and warm blueberry sauce.

Warm Blueberry Sauce:
Combine butter and cornstarch in a saucepan. Add sugar, nutmeg, salt, water and blueberries. Cook over low heat, stirring constantly until thickened.
