Ingredients
- 8 oz whole wheat linguine
- 2 large lemons
- 1 med. leek - white & pale green parts only
- thinly sliced and rinsed well - dry
- 1 tblsp olive oil
- 1/2 c. chopped flat leaf parsley - divided
- 2 cloves garlic, crushed
- 1/4 tsp salt; 1/8 pepper
- 3/4 c. Parmesan - divided
- 1/4 c. chives snipped
Preparation
Step 1
Cook pasta until tender-Reserve 1 1/2 c. cooking liquid
Finely grate 1 tblsp lemon zest
And squeeze 1/4 c. lemon juice - set juice aside
Heat oil in skillet over med. heat
Add leek, lemon zest, 1/2 parsley, garlic, S&P
Cook until leek is soft - 6 min.
Add pasta, 1c. cooking liquid, lemon juice, half parsley,
Cook, stirring constantly, until liquid is absorbed 1min.
Add remaining liquid if desired.
Remove from heat - Remove garlic
Toss pasta w/1/2 Parmesan, 2 tblsp chives -
Transfer to serving bowl & sprinkle on remaining Parmesan & chives
Serve with lemon wedges
