Goat Cheese & Tomato Open-Faced Sandwiches

Ingredients

  • 4 Centre-Cut Slices Sourdough Bread, 1/2-in. thick
  • 2-3 Tbsp. Olive Oil
  • 4 oz. Goat Cheese, softened
  • 2 Tomatoes, chopped
  • 2 C. Mesclun Greens
  • 3 Tbsp. Olive Oil
  • 3 Tbsp. Balsamic Vinegar
  • Salt & Freshly Ground Black Pepper

Preparation

Step 1

Preheat broiler to high; Brush bread slices with olive oil, place on baking sheet & broil till toasted; leave broiler on. Spread each slice with 2 Tbsp. goat cheese, then top with tomatoes. Broil till cheese softens, 1-2 min. more. Toss mesclun with oil & vinegar. Season with salt & freshly ground black pepper to taste. Divide the greens among the sandwiches, then cut each sandwich into 4 pieces & serve.
