Ingredients
- 1/2 cup melted butter
- 1 cup brown sugar
- 2 eggs
- 2 tsp. vanilla
- 1/4 cup milk
- 1 cup orange juice
- 1 1/4 cup flour
- 1 cup whole wheat flour
- 4 tsp. finely grated orange peel
- 1 tbsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 cup frozen or fresh cranberries
Preparation
Step 1
Preheat oven to 400F. Line pans with baking cups. Blend butter and brown sugar using a wooden spoon. Whisk in eggs, one at a time and stir in vanilla, milk and orange juice. Combine the flours, orange peel, baking powder and cinnamon and salt in another bowl. Make a well in the centre and pour in orange juice mixture. Blend just until combined. Fold in cranberries. Bake for 22-25 minutes, or until muffins spring back when lightly touched. Turn out onto a cooling rack.
