Sea Scallops Gratin

Ingredients

  • 3 T. olive oil
  • 1 1/2 C. fresh bread crumbs
  • 2 t. minced garlic
  • 1 1/4 lb. sea scallops, rinsed and patted dry
  • 4 T. dry white wine
  • 4 t. unsalted butter, cut into small pieces
  • 2 t. chopped chives

Preparation

Step 1

Heat 1 1/2 T. olive oil in 10" or 12" saute pan. Add bread crumbs and cook until crumbs are deep brown, 4-5 minutes. Set aside.

Pour 1 t. olive oil into each of 4 oven proof souffle dishes. Spoon 1/2 t. garlic into each dish and stir into oil. Evenly divide scallops and pack them into each souffle dish. Pour 1 T. wine over each serving and salt lightly. Divide bread crumbs and spread lightly over scallops. Dot each with butter and place dishes on a baking sheet. Place in 400 degree oven for 12 minutes. DO NOT OVERCOOK!
