Pasta Salad

Ingredients

  • 8 oz Fusili pasta
  • 2 salad cucumbers, peeled and sliced
  • 1/2 tsp mustard
  • 4 green onions, sliced
  • 2 tbsp Parmesan
  • 6 oz tomatoes, cherry or large, cubed
  • 2 tsp dried basil
  • 1 tbsp red wine vinegar
  • 1/4 cup black olives, cut in half

Preparation

Step 1

Cook pasta for 8-10 minutes in lightly salted water until al dente; drain.

Place pasta in bowl and cucumbers, onions, tomatoes, olives, basil, mustard and wine vinegar. Mix well.

Season with salt and pepper. Sprinkle with Parmesan cheese before serving.
