Ingredients
- 3-4 lbs pork.
- Green chili (3 cans or 10-12 fresh roasted)
- 1/2 c flour
- 2 cloves garlic
- 1 med white onion
- 1 qt chicken broth
- 1 can Green Enchilada sauce or Tomatillas (pumpkin can size)
- 1/2 tsp cumin
- salt and pepper
Preparation
Step 1
Meat choices: Pork tenderloin or pork stew meat, all cut into bite size pieces
Dredge pork in flour seasoned with chili powder.
Brown in about 1/3 cup oil. When meat is about half done, add the onions. When the meat is cooked add the remaining ingredients and let simmer for several hours. (the longer the better)
