Ingredients

  • 3-4 lbs pork.
  • Green chili (3 cans or 10-12 fresh roasted)
  • 1/2 c flour
  • 2 cloves garlic
  • 1 med white onion
  • 1 qt chicken broth
  • 1 can Green Enchilada sauce or Tomatillas (pumpkin can size)
  • 1/2 tsp cumin
  • salt and pepper

Preparation

Step 1

Meat choices: Pork tenderloin or pork stew meat, all cut into bite size pieces
Dredge pork in flour seasoned with chili powder.
Brown in about 1/3 cup oil. When meat is about half done, add the onions. When the meat is cooked add the remaining ingredients and let simmer for several hours. (the longer the better)
