Green Onion Potato Cakes

Ingredients

  • 2 c. mashed potatoes
  • 1 egg, lightly beaten
  • 1/4 c. chopped green onion
  • Seasonings, to taste
  • Flour, for dredging
  • Oil or fat, for frying

Preparation

Step 1

Combine potatoes, egg, onion and seasonings, and form into 4 patties. Dredge in flour. Place in skillet with hot oil. Fry patties until done, turning when browned. Drain on paper towels before serving.
