Ingredients
- 1 Lg zucchini cut into 1/8"-1/4" slices
- 1/3 C whole grain breadcrumbs, optional Panko
- 1/4 C finely grated parmesan cheese, reduced fat
- Kosher or sea salt to taste
- 1/8 tsp garlic powder
- 1/8 tsp cayenne pepper
- 3 TBSP low fat milk
Preparation
Step 1
1) Thinly slice the zucchini with a madolin slicer
2) Mix all dry ingredients together except the zucchini.
3) Dip slices into the milk then dump them into a gallon size bag filled with the dry seasonings. Shake to coat.
4) Dump onto a cookie sheet, bake at 425 degrees until crispy brown.
