stuffed chicken breasts

Ingredients

  • 4 skinless boneless chicken breast halves
  • 4 oz thinly sliced prosciutto
  • 4 oz no or low fat mozzarella
  • 5 t snipped fresh chives divided
  • 1 t butter

Preparation

Step 1

preheat oven to 375. Rinse chicken breasts and pat dry. Flatten each breast with the palm of your hand. cut a pocket in the side of each chicken breast. Season with salt and pepper to taste. Set aside.
Lay prosciutto on work surface and cover each piece with a slice of cheese and 1T chives. Roll tightly to form a cylinder. make 4 rolls.
stuff one roll into each breast pocket. Secure each with a toothpick
Melt butter in ovenproof pan, brown chicken breasts on both sides and sprinkle with remaining chives. Transfer to preheated oven and bake 20 to 25 min or until cooked
