Egg and Hash Brown Casserole

Ingredients

  • 8 slices bacon
  • 2 C shredded hash browns
  • 1/2 lb sliced mushrooms
  • 1 red pepper chopped
  • 1 green pepper chopped
  • 1 small onion chopped
  • 12 eggs
  • 1/3 c sour cream
  • shredded cheese

Preparation

Step 1

Preheat oven to 350

Fry bacon in skillet, leave 2 T grease and sautee potatoes, peppers and onion in grease for 10 mins.

Spread tater mixture in 13x9 pan sprayed with cooking spray. Whisk eggs and sour cream and pour over taters. Top with bacon and cheese.

Bake for 40 mins
