Desserts - Lemon Bars (Paige Sutcliff)

Ingredients

  • 1 box of Lemon Cake Mix (prefer Duncan Hines)
  • 3 eggs
  • 1/2 cup margarine
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup lemon juice

Preparation

Step 1

Preheat oven to 350 degrees.
Mix 1 egg, margarine and dry cake mix until crumbly. Reserve 1 cup of the packed mixture for topping.

Press all except the 1 cup of mixture into a 9x13 baking dish (Do not grease dish). Bake on 350 for 15 minutes.

While this is baking, beat 2 eggs, sugar, baking powder, salt and lemon juice till light and foamy (2-3 minutes).

When crust is done (15 min.) pour mixture over hot crust. Sprinkle top with the remaining cup of crust mixture. Bake 15 minutes till light brown. When you take it out of the oven, sprinkle the top with powdered sugar. Let it cool and then cut it into squares to serve.
