Beefy Tortilla Casserole

Ingredients

  • 1 1/2 lb. lean ground beef
  • 1 (14.5-oz.) can diced tomatoes with green chiles, undrained
  • 1 (10 3/4-oz.) can condensed cream of onion soup
  • 1 (1.25-oz.) pkg. taco seasoning mix
  • 1/4 cup water
  • 6 (5- or 6-inch) corn tortillas, cut into 1/2-inch strips
  • 1/2 cup sour cream
  • 4 oz. (1 cup) shredded Cheddar cheese
  • 3 tablespoons sliced green onions

Preparation

Step 1

1 Cook ground beef in large skillet over medium heat until thoroughly cooked, stirring frequently. Drain.

2 In 3 1/2- to 5-quart slow cooker, combine ground beef, tomatoes, soup, taco seasoning mix and water; mix well. Add tortilla strips; stir in gently.

3 Cover; cook on low setting for 7 to 8 hours.

4 About 5 minutes before serving, spread sour cream over casserole. Sprinkle with cheese. Cover; let stand about 5 minutes or until cheese is melted. Sprinkle with onions.
