Sirloin and mushrooms in rich beef-dijon sauce

Ingredients

  • 8 oz. uncooked angel hair pasta
  • 1 lb. boneless beef top sirloin steak, cut into 1-inch pieces
  • 2 garlic cloves, minced
  • 1 (8-oz.) pkg. (3 cups) sliced fresh mushrooms
  • 1 cup beef broth
  • 1/4 cup diagonally sliced green onions
  • 2 tablespoons all-purpose flour
  • 3 tablespoons skim milk
  • 2 tablespoons Dijon mustard
  • Coarse ground black pepper

Preparation

Step 1

1 Cook pasta to desired doneness as directed on package.

2 Meanwhile, spray 12-inch nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add beef and garlic; cook about 4 minutes, stirring frequently. Add mushrooms, broth and onions. Reduce heat; cover and cook 3 minutes. Uncover; cook an additional 2 to 3 minutes.

3 In small bowl, combine flour and milk; blend until smooth. Add to skillet; cook and stir 2 minutes or until slightly thickened. Stir in mustard until smooth.

4 Drain pasta; arrange on serving platter. Spoon beef-mushroom mixture and sauce over pasta. Sprinkle with pepper.
