Ingredients
- 1 Tbsp butter and veetable oil
- 1/2 onion coarsely chopped
- 2 med sweet potatoes peeled and duiced
- 1 tsp curry powder
- 5 c boiling vegetable stock
- 19 oz can white beans drained and rinsed well
- 1 Tbsp eac balsamic vinegat and maple syrup
- Sea salt and fresh ground pepper
Preparation
Step 1
Cook onions over med heat in butter and oil about 5 min until soft
Add curry powder
Stir 1 min
Add sweet potatoes and cook stirring 2 min
Add hot stock
Bring to a boil
Reduse heat and simmer 20 min or un til potatoes are soft
Add 1/2 the beans and puree until smooth
Add remaining beans vinegar and maple syrup
