Soups - Sausage and Chicken Soup-Paige Sutcliff

Ingredients

  • 8 oz cooked Louis Rich Smoked Turkey Sausage – boil 10 minutes and drain
  • 8 oz skinned and boned cooked chicken
  • 1 tablespoon and 1 teaspoon of olive or vegetable oil
  • 1/2 cup each of diced onion and bell pepper
  • 2-3 garlic cloves, minced
  • 4 o (1/2 cup) uncooked regular long-grain rice
  • 2 tablespoons parsley
  • 2 packets Weight Watchers Instant Chicken Broth and seasoning

Preparation

Step 1

In 4 qt saucepan, heat oil over high heat. Add onion, garlic and pepper until onion is lightly browned. Stir in rice, parsley, basil and broth mix. Cook 1 minute. Add 1 quart water, boil. Reduce to low, cover, simmer 20-25 min. Cube sausage and chicken into bite-size pieces. Add meats, a dash of black pepper, simmer 5 minutes or cover and cook or warm for 1 hour.
