Warm Bean & Sausage Salad

Ingredients

  • 1 pkg meatless sausage patties
  • 1/3 c vinaigrette dressing
  • 1 T Dijon mustard
  • 1 med red onion, sliced
  • 8 oz jar roasted red peppers,
  • drained & sliced
  • 2 - 15 oz cans cannellini beans,
  • drained & rinsed
  • 2.25 oz can sliced Kalamata olives
  • 9 oz bag spinach
  • 2 lbs green beans, snapped
  • (Seasonings as desired)

Preparation

Step 1

In sm bowl whisk together mustard & vinaigrette. Set aside. Cut sausage into small pieces & brown in skillet. Add onion and ½ c water to skillet, cover and cook on med heat until onions are soft. Stir in pepper flakes, beans, olives & vinaigrette mixture. Heat for apx 2 min.
Place spinach on plates and top with sausage mixture. In a lg skillet add green beans & 2 in water. Let steam over med heat until desired tenderness is acquired. If water cooks out add more in small amts at a time.
Season to taste.
