Ingredients
- 1/2 cup Guiness
- 2 tbsp cooking oil
- 1/4 lb onions, large, sliced thin
- 1 clove garlic, minced
- 1 cup beef stock
- 1 1/2 lb beef sirloin, 1 1/2" cubes
- 1 tsp red wine vinegar
- 1 tsp dijon mustard
- 2 tsp brown sugar, packed
- 2 cloves, ground
- 1/4 tsp parsley
- 1/8 tsp thyme
- 1 bay leaf
- 1/4 tsp salt
- 1/4 tsp pepper
Preparation
Step 1
Coat beef in flour and brown in a large pan. Transfer to a heavy roasting pan.
Saute onion and garlic in the same pan as the beef. Add to reserved beef.
Combine remaining ingredients in mixing bowl. Mix thoroughly. Add to beef in the roasting pan.
Cover the pan and place in preheated oven at 325 degrees. Cook mean until tender for 1 1/2 to 2 hours.
