Ingredients
- 1 lb chicken breast cutlet, cut into equal sized portions
- 3 tbsp flour, all purpose
- 1 1/2 tbsp canola oil
- 3 onion, green / scallion, finely chopped (~1/2 cup)
- 3/4 cup water
- 1/3 cup wine, white dry
- 1 1/2 tbsp peppercorns, green, drained
- 1 tbsp Dijon mustard
- 3/4 tsp tarragon, dried
- 3/4 tsp sugar, white granulated
- 1/3 tsp salt, sea
Preparation
Step 1
Prep
Place the chicken cutlets between two pieces of plastic wrap and flatten to 1/4" thickness.
Dredge the chicken cutlets in the flour, shaking off the excess.
Cooking
Heat the oil in a non stick pan over medium heat.
Add the chicken and saute until cooked through, about 3 minutes per side.
Transfer to a plate and cover to keep warm.
Add the green onion to the pan and cook stirring until soft, about 1 minute.
Add the water, wine, green peppercorns, mustard, tarragon, sugar and salt.
Heat to boiling and remove from the heat.
Serve chicken with peppercorn sauce spooned over top.
