Ingredients
- 1 lb chorizo
- 1 md onion chopped
- 1 md carrot chopped
- 1 celery stalk chopped
- 3 garlic cloves chopped
- 2 c coarsley crumbled corn bread
- 1/4 c chopped cilantro
- 1/2 c chicken stock
- 1 t unsalted butter
- grated cotjita cheese
Preparation
Step 1
1) preheat oven to 350
2) heat large skillet over md heat and cook chorizo, break with spoon and stir occasionally til it browns, about 5 minutes. add onion, carrot, celery and garlic and cook about 10 minutes til browned.
3) add cornbread and cilantro and gradually add enough stock til bread is not too dry or wet. stir gently
4) butter casserole dish. spread stuffing in an even layer. bake til heated through and lightly browned on top, about 20 minutes.
5) serve asap garnished with cheese
