Santa Fe Peppers

Ingredients

  • 4 Large Bell Peppers
  • 15 oz can of Whole Kernel Corn - drained
  • 15 oz can of Black Beans - drained
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Salsa

Preparation

Step 1

1) Cut Peppers in half lengthwise and remove seeds.
2) Place under the broiler face down and broil until lightly charred.
3) Mix Corn, Beans, Cheese and Salsa.
4) Fill Pepper shells and broil several minutes until hot and Cheese is melted.
