Pumpkin Pie (Gluten Free)

Ingredients

  • Filling:
  • 1 can Pumpkin
  • 1/2 cup Sugar
  • 2 Eggs
  • 1/2 Tsp Salt
  • 1 1/2 cups Cream
  • 2 Tsp Pumpkin Spice
  • Crust:
  • 2 cups Gluten Free Cereal (Corn Flakes)
  • 2 TBSP Sugar
  • 2 TBSP Melted Butter

Preparation

Step 1

Crust:
1) Crush Cereal with rolling pin and pour into bowl.
2) Add Butter and Sugar and blend.
3) Pat into bottom and sides of 9" pie pan.

Filling:
1) Beat Eggs slightly.
2) Add Pumpkin, Sugar, Salt, Spice and blend.
3) Add Cream and mix thoroughly.
4) Pour into unbaked pie crust.
5) Bake at 425 degrees for 15 minutes.
6) Reduce temp to 350 degrees for 45 minutes.
7) Cool and refridgerate.
