Ingredients
- 1 1/3 c pearl barley
- 1/2 c panko
- 1 t chopped fresh sage
- 3/4 tsp salt
- 1 lb pork loin
- 2 t spicy mustard
- nonstick cooking spray
- 2 t baslamic vinegar
- 2 tsp olive oil
- 3 t chopped walnuts
- 2 c arugula
- 1 fuji aplle sliced thin
Preparation
Step 1
1)preheat oven to 400. bring large pot of water to boil and cook barley according to package. cool slightly
2) on baking sheet combine panko, sage and 1/2 tsp salt; mix well. coat pork with mustard. roll pork in mix. coat roasting pan with cooking spray and place pork in pan. roast 25 minutes
3) add vinegar, oil and remaining salt to barley; toss. fold in walnuts, arugula and apple
4) remove pork from oven let it stand 3 minutes. slice into 1/2" medallions and serve over barley salad.
