Ingredients
- 1 c creamed corn
- 4 t unsalted butter
- 1 tsp salt
- 1 3/4 c flour
- 3 eggs
- 1/2 c shredded cheese
- 1 t chives
Preparation
Step 1
1) preheat oven to 400. line baking sheets with parchment paper. bring corn, butter, salt to simmer over medium heat. reduce heat to low add flour and stir with wooden spoon til smooth and pulls away from side of pan (about 2 minutes)
2) scrape dough into bowl; let cool slightly. add eggs 1 at a time, stir well between each addition. stir in cheese and chives. chill 15 minutes
3) scoop tablespoon mounds of dough onto baking sheets about 2" apart. sprinkle with more cheese. bake til golden brown and puffy, 20-25 minutes. serve warm
