Tuna Burger

Ingredients

  • 3 cans of flaked tuna
  • 1/4 teaspoon freshly-ground black pepper
  • 1/4 cup minced shallots
  • 1/4 to 1/2 cup chopped parsley
  • capers (to taste)
  • 2 egg lightly beaten
  • 1/2 cup breadcrumbs

Preparation

Step 1

In a bowl, add drained tuna and flake up.
Add parsley and shalots and capers and mix.
Add eggs
Add breadcrumbs by thirds,until the mixture binds, but is not too wet.

Divide mixture into 10 using hands and form flat patties about 3/4 inch thick. If the patty is too moist, add a little more breadcrumbs.

Patties can be grilled, broiled or pan-seared. Serve on a bun with fresh tomato, lettuce, red onion and wasabi mayonnaise.
