Ingredients
- 4 cups arugula
- 1 lb. watermelon, cut into chunks
- 1/2 red onion, thinly sliced
- 4 oz. fat-free feta cheese
- 16 oz. cooked roast beef, sliced
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1/4 lemon juice
- 1 garlic clove, crushed
- 1 tsp. dried parsley
Preparation
Step 1
1. Combine first 5 ingredients in a large bowl.
2. In a smaller bowl, whisk together remaining ingredients to make dressing.
3. Pour dressing over salad and toss to coat.
