Ingredients

  • 4 cups arugula
  • 1 lb. watermelon, cut into chunks
  • 1/2 red onion, thinly sliced
  • 4 oz. fat-free feta cheese
  • 16 oz. cooked roast beef, sliced
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/4 lemon juice
  • 1 garlic clove, crushed
  • 1 tsp. dried parsley

Preparation

Step 1

1. Combine first 5 ingredients in a large bowl.

2. In a smaller bowl, whisk together remaining ingredients to make dressing.

3. Pour dressing over salad and toss to coat.
