Pumpkin Pancakes
These yummy spiced Fall treats are the perfect fuel to start a cold morning with. Delicious with cinnamon sugar butter!

Ingredients
- 1 cup flour, plus extra for altering consistency
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tbsp sugar
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 2 eggs
- 1 cup milk, plus extra for altering consistency
- 1 cup pumpkin puree
- 2 tbsp melted butter
Preparation
Step 1
Whisk together 1 cup flour, baking powder and salt in a small bowl. In a separate bowl, mix egg, 1 cup milk, pumpkin, sugar, and spices.
Mix dry ingredients into wet ingredients. Most people using this recipe will be using canned pumpkin- one downfall of that is that it never seems to have the same moisture content from one experience to the next! If batter seems too thick, add a bit of milk a tbsp at a time. If it seems too thin, do the same thing with flour. When your perfect consistency is achieved, add the melted butter.
Heat your nonstick pan to medium high, or your griddle to 375 f. Cook pancakes about 45 seconds per side, flipping when the raw side begins bubbling.
Serve with generous heaps of cinnamon sugar butter, maple syrup, pralines, and thick smoked bacon! Delish.
