Apricot Bars

Ingredients

  • 1 1/2 cups dried apricots
  • 2 2/3 cups flour, divided
  • 1/2 cup sugar
  • 2 1/4 cups packed brown sugar, divided
  • 1 cup butter or margarine, softened
  • 3 cups chopped walnuts, optional
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 eggs, slightly beaten
  • 1 teaspoon vanilla

Preparation

Step 1

Cook apricots for 10 minutes. Drain, cool and cut. Combine flour, sugar, 1/4 cup brown sugar, butter and 1 cup of nuts. Mix until crumbly. Press 2/3 of mixture into ungreased 10 X 15 cookie pan. Bake at 350 degrees for 10 minutes or until golden brown. In small bowl, mix 2/3 cups flour, baking powder, salt, eggs, remaining brown sugar, milk and vanilla. Mix in apricots and rest of nuts. Spread over baked crust. Sprinkle remaining 1/3 mixture on top. Bake 25 - 30 minutes.
