Emerald Isle Stew

Ingredients

  • 1 T oil
  • 1 med onion
  • 1 lb. round steak cut in 1" cubes
  • 5-6 large carrots
  • 1-10 1/2 oz. can beef broth
  • 3 stalks celery
  • 3-4 large potatoes, peeled and cubed
  • 1-10 1/2 oz. can golden mushroom soup
  • 1 1/2 c water
  • 1 / t thyme
  • pepper

Preparation

Step 1

In Dutch oven on med-high, heat oil, add beef, cook until brown. Stir in remaining ingredients. Bing to a boil.. reduce het and simmer partially covered for 1-1 1/2 hours.
