Corn Flake Cookies
Corn Flake Cookies
Makes 8 dozen
2 C. sifted flour
1 tsp. Baking soda
salt
½ tsp baking powder
1 ¼ C. Shortening
1 C. Sugar
1 C. Brown Sugar, firmly packed
2 eggs, well beaten
1 tsp. Vanilla
2 C. flaked or shredded coconut
2 C. Corn Flakes
Sift dry ingredients.
Cream shortening, sugars until light. Add eggs and vanilla.
Add dry ingredients to creamed mixture; mix well. Add coconut and corn flakes. Drop by spoonfuls on greased baking sheet; 1 ½ inches apart.
Bake at 350º for 8 to 10 minutes.
