ED's SEAFOOD STEW

Ingredients

  • 3 lb. of white fish cut into bite size pices
  • 2 ea. 7 1/2 oz. cans minced clams and juice
  • 1 can of crab meat
  • 1 lb. shrimp
  • 1 lb. scallops
  • 3 Tbl. Oil
  • 1 1/2 cups chopped onion
  • 4 cloves of garlic
  • 1 cup finely chopped green peppers
  • 2 ea #2 1/2 cans chopped tomatoes
  • 4 chicken bullion cubes
  • 1 1/2 cups of sherry wine
  • 2 to 3 cups of water
  • 2 to 3 Tbs. seafood spice mix.

  • Seafood Spice Mix
  • 1 cup plus 1 Tbsp of iodized salt
  • 1/2 cup plus 1 tsp. paprika
  • 1 Tbsp. cayenne pepper
  • 1/2 cup black pepper
  • 1/4 cup of onion powder
  • 1/2 cup of granulated garlic
  • 1/2 cup plus 1 Tbsl. Dried oregano
  • 1/2 cup plus 1 Tbsp. dried thyme

Preparation

Step 1

Add oil to 8 qt. pot over medium heat sauté onions, garlic and green peppers. Add cans of tomatoes with juice, dissolve bullion in water and add to pot. Add spice mix and wine, simmer for 20 minutes. Add shrimp, crab, and clams. Boil 2 minutes stir and serve

_Seafood Spice Mix:_

Combine and mix all ingredients
Yield: 4 cups.
