Oven Barbecued Pork Chops

Oven barbecued pork chops, baked with a homemade spiced barbecue sauce. These make a very good weeknight meal for the family. Make the sauce the night before and refrigerate until cooking time.

Ingredients
- 3/4 cup ketchup
- 3/4 cup vinegar
- 1 1/2 cups water
- 2 mediums onions: 1 sliced and 1/2 cup chopped onion
- 1 clove garlic, finely minced
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 tablespoon Worcestershrie sauce (or 2 tsp)
- 3 tablespoons light brown sugar
- 1/8 to 1/4 teaspoon ground cayenne, or to taste
- 6 center-cut loin pork chops, about 1-to-1 1/4-inch thick
Preparation
Step 1
In a saucepan, combine ketchup, vinegar, water, chopped onion, garlic, salt, pepper, Worcestershire sauce, cayenne, and brown sugar. Bring to a boil. Reduce heat to low and simmer for about 15 minutes, stirring frequently. Let stand and cool slightly.
Place chops in a large bowl. Pour sauce over the pork chops, turning to coat thoroughly.Cover and refrigerate for at least 3 hours or all day.
Heat oven to 350.
Arrange chops in a shallow baking dish. Top with sliced onion then pour sauce all over.
Bake, uncovered, about 1 to 1 1/2 hours, or until chops are tender, basting occasionally.
**Tip: Temp should be 155-160 when finished. Remember temp will rice approx 10 degrees while resting.
