Ingredients
- 1 large avocado, halved, pitted
- 1 1/2 tablespoons lime juice
- 1 1/2 teaspoons chili-garlic sauce
- 3 tablespoons olive oil
- 2 cups diced cooked chicken (or vegetarian equivalent)
- 1 cup diced peeled jicama
- 1 cup diced red onion
- 1 large red bell lpepper, diced
- 1/2 cup cilantro, chopped
- salt and pepper
- Romaine lettuce leaves
Preparation
Step 1
Process avocado flesh with lime juice, chili-garlic sauce and olive oil.
Mix chicken, jicama, red onion, bell pepper and cilantro and toss with dressing. Season with salt and pepper and serve over lettuce leaves.
