Ingredients
- Sauce:
- 1 box Mori Nu Silken Tofu (12.4 ounces)
- 1/2 cup water
- 3 T fresh lemon juice (include zest from lemons)
- 3 T low sodium tamari
- 2 cloves garlic
- Filling:
- 1 red onion, minced
- 1 pound Portabella mushrooms, sliced
- 1 tsp oregano
- chopped Italian parsley, for garnish
Preparation
Step 1
Sauce:
Place all ingredients in blender and blend until smooth.
Filling:
Water saute onion until translucent. Add mushrooms and saute until they become limp and moisture has evaporated. Stir in oregano. Pour sauce over and mix well. Garnish with fresh parsley.
Serve over brown rice.
