Ingredients

  • 3 cups fresh baby spinach leaves
  • 2 cups arugula
  • 1/4 red onion, sliced fine
  • 1/2 cup raw pecan halves, roughly chopped or whole
  • 1 cup chopped cucumber
  • 2 small avocados, chopped
  • 2 cups fresh sliced strawberries
  • DRESSING
  • 1 1/3 cups sliced strawberries
  • 1/2 cup balsamic vinegar
  • 1 whole shallot, chopped (or 1 clove garlic + 1/4 onion, chopped)
  • 4 teaspoons fresh thyme (or 1 1/3 tsp. dried thyme)
  • 2 1/2 teaspoons Dijon mustard
  • 1/2 teaspoon ground black pepper
  • 1/2 cup water

Step 1

Combine all ingredients for the salad in a bowl and set aside.
