BISQUICK ZUCCHINI PIE

Ingredients

3 c. diced, unpeeled zucchini
1 lg. onion, chopped
½ c. grated Parmesan cheese
½ c. grated cheddar cheese
½ c. salad oil
1 c. Bisquick
4 eggs, beaten
½ to 1 tsp. parsley
Dash of salt and pepper

Directions

Grease 9-inch pie plate or 9 x 9 square pan. Combine all ingredients. Bake at 350 degrees for 35-40 minutes or until lightly browned.
