Individual Breakfast Pizzas
I’m not a huge eggs-for-breakfast person, but I love ‘em for lunch or dinner. I tend to lean toward the sweeter side of breakfast, opting for oatmeal with bananas, homemade quick breads with nut butter, yogurt and fruit, or cold cereal and granola instead of eggs.
That’s not to say, however, that I don’t eat my fair share of eggs. The little packages of protein make their way into many of my lunches and dinners, such as these individual breakfast pizzas.
Breakfast pizza is an eggy brunch or “brinner” fan’s dream-come-true!
Crisp whole wheat crust, salty crumbled sausage, melted cheese, and perfectly cooked eggs complete these individual-sized pizzas.
Who doesn’t love a personal pizza? I know I do. I divided a one pound ball of whole wheat pizza dough into four portions, one of which I find is the perfect size for me.
You can cut each pie into small slices, dig in with a fork & knife, or jump right in with a big bite.
The eggs are cooked just until the whites are fully set but the yolks remains a golden molten consistency. If you don’t like your eggs this way, (or are concerned about salmonella), simply break the yolks prior to cooking the pizzas, and leave them in the oven for a few additional minutes.
You can also customize these pizzas to accommodate a vegetarian diet with my Individual Sweet Potato Breakfast Pizzas, for which I sub in roasted sweet potatoes for the sausage.
