- 1 onion, diced
- 1 red bell pepper, diced
- 1 poblano, diced
- 1 zucchini, sliced
- 3/4 cup fresh pumpkin, peeled and diced (you can substitute 1 sweet potato, also yummy)
- handfull of mushrooms, sliced
- chopped garlic, as much as you like
- dash of EVO
- 1 can diced tomatoes (or 1 1/2 cup pureed fresh)
- 2 TBS mamacitas mexican seasoning
- 1 tsp salt
- 2 tsp sugar
- 2 TBS chocolate powder ( TJ's sipping chocolate is nice)
- 1 can black beans
- 1 can red kidney beans
- 1 bottle good beer
- 1/2 cup frozen roasted corn kernals
- optional: chopped serrano or jalepeno to add in for heat as you wish
