Thyme is the critical component .. along with a bit of sugar to make sure the tomatoes are sweet.

Ingredients
- 1 large eggplant, about 1 1/2 pounds
- 4 zucchini, about 1 pound
- 1 large onion, 3/4 pound, chopped
- 1 yellow pepper
- 1 can of chopped tomatoes
- 1 can of tomato paste
- 1 tb sugar
- 2 cloves of garlic
- 2 bay leaves
- 2 teaspoons fresh thyme leaves
- 3 tbs olive oil
- 1/2 tsp dried oregano
- Salt
- Freshly ground pepper

Step 1
1. Heat the olive oil in a large pot, add onions, chopped yellow pepper, garlic, bay leaves, and spices.
2. Mix in chopped zucchini and eggplant with tomatoes and tomato paste. Add two cans of water from tomato paste can. Add the sugar.
3. Cook to boiling, then reduce heat to simmer. Simmer on the stove for 1 hour, until very juicy.
